This coffee from the Manos Juntas micromill highlights the fruity flavors of the honey process method. Instead of the traditional washed method, these cherries are skinned and depulped but left to dry with the mucilage still on the beans in raised beds under shade. We roast it lighter to bring out the fruity flavors of strawberry, cranberry, raisin lime and orange. It is tart but also sweet, especially as it cools down.
